Spinach and avocado cream

Ingredients (for 1 serving):

  • ½ avocado (approx. 70 g)
  • 1 handful of fresh spinach (approx. 30 g)
  • Juice of ½ lime
  • 1 small garlic clove
  • 1–2 tbsp chopped onion
  • some salt
  • Optional : 1-2 tablespoons of water for consistency or a splash of apple cider vinegar

Preparation:

  1. Blend everything together finely in a blender or with a hand blender.
  2. Season with salt and lime juice.
  3. Dilute with a little water if necessary.

Ideas for use:

  • as a dip for vegetable sticks or baked potatoes
  • as a spread for wraps or wholemeal bread
  • as a topping for rice or quinoa bowls
  • or as a “creamy” sauce for pasta or zoodles
